Ingredients Of Murgh Malaiwala

  • For the gravy:
  • 1 cup Cream
  • 3 Green chillies, chopped
  • 1 Onion, chopped
  • 2 1/2 cups Milk
  • 1 tsp Green cardamom powder
  • 1 tsp Ginger
  • 2 tbsp Coriander leaves
  • 1/2 tsp Dry ginger powder
  • 1 tsp White pepper powder
  • 1 tsp Kasoori methi
  • 2 tsp Garam masala
  • A pinch of Saffron
  • 2 tsp Almonds, chopped
  • to taste Salt
  • For the marinade:
  • 5 Chicken drumsticks
  • 1 tsp Ginger paste
  • 1 tsp Garlic paste
  • 2 tsp White pepper powder
  • For the garam masala:
  • 1 Black cardamom (badi elaichi)
  • 6-8 Green cardamoms (choti elaichi)
  • 1 piece Mace (javitri)
  • 2 tsp Cumin seeds (zeera)
  • 4-5 Cloves (laung)
  • 1 Cinnamon (dalchini)
  • 4-5 Black peppercorns (kali mirch)
  • 6-7 Dried rose petals

How to Make Murgh Malaiwala

  • For the marination:
  • 1.Make small incisions in the drum sticks of chicken. Marinate with ginger, garlic paste and white pepper for thirty minutes.
  • For the garam masala:
  • 1.Dry roast the garam masala ingredients and grind them in a mortar and pestle or mixie.
  • For the gravy:
  • 1.Heat a pan and add cream, onions, green chillies, and cook till the onions are soft.
  • 2.Now add the milk and the marinated chicken, mix well.
  • 3.Add green cardamom powder, chopped ginger, dry ginger powder, coriander leaves, white pepper powder, kasoori methi, garam masala, a pinch of saffron. Let it simmer.
  • 4.Saute well and cook for some time (about 7-10 minutes). Add salt. Mix well.
  • 5.Garnish with chopped almonds and serve hot.

  • For Marination:
  • 500 Gram Chicken
  • 2 tsp Ginger Garlic Paste
  • 3 tsp Curd
  • 1 tsp Lemon Juice
  • 1 tsp Vinegar
  • 1 tsp Coriander Powder
  • 1 tsp Cumin Powder
  • 1 tsp Red Chilli Powder
  • 1 tsp Salt
  • 2 tsp Onion, chopped
  • For Gravy:
  • 2 tsp Butter
  • 1 tsp Red Chilli Powder
  • 1 tsp Coriander Powder
  • 1 tsp Cumin Powder, chopped
  • 1 tsp Ginger
  • 1/2 Cup Water
  • 1 tsp Salt
  • 1 Green Chilli
  • 6 Tomatoes
  • 1/2 tsp Sugar
  • 3 tsp Butter
  • 3 tsp Cream

How to Make Amritsari Chicken Masala

  • For marination:
  • 1.Take chicken in big bowl.
  • 2.Add ginger-garlic paste, curd, lemon juice, vinegar, coriander powder, cumin powder, red chilli powder, salt and chopped onion to the chicken.
  • 3.Mix all the ingredients thoroughly.
  • 4.Keep aside for marination for 2 hours.
  • For gravy:
  • 1.Take butter in a hot pan, add red chilli powder to it.
  • 2.Saute them in a pan.
  • 3.Add coriander powder, cumin powder and chopped ginger to it.
  • 4.Saute them well.
  • 5.Add water to the pan and mix well.
  • 6.Add salt, green chilli, tomato and sugar. Mix well.
  • 7.Take butter in another hot pan and spread it all along the sides of the pan.
  • 8.Add the marinated chicken into the pan.
  • 9.Saute the chicken with the butter.
  • 10.Cover the pan to let the chicken cook.
  • 11.Remove the lid and check if the chicken has turned golden brown and the butter has subsided.
  • 12.Add the cooked tomato gravy to the chicken and mix well.
  • 13.Cover the pan again and let it cook for a while.
  • 14.Now remove the lid and add cream to the gravy.
  • 15.Mix them well.
  • 16.Serve hot, topped with butter, coriander leaves and green chillies.

How to Make Spicy Chicken

  • 1.Heat mustard oil. Add onion seeds and fennel seeds. Once they release flavor, add chopped garlic. Saute for a while.
  • 2.Add the chopped onion, tomato, ginger and green chillies. Stir fry until the onion turns brownish.
  • 3.Meanwhile, fry curry leaves and crush them.
  • 4.Add the boneless chicken cubes, tomato paste and stir for a while.
  • 5.Add the other dry spices and mix well.
  • 6.Cook on a low flame, with a lid on top for about 10 minutes.
  • 7.Add the crushed curry leaves and mix well.

How to Make Kerala Chicken Roast

  • 1.Clean and cut the chicken into medium sized pieces.
  • 2.Make a paste of all the ingredients under marination.
  • 3.Marinate the chicken pieces with this paste and keep aside for an hour.
  • 4.Cut onions into very thin slices and fry in hot oil. Drain them and keep aside.
  • 5.Fry the chicken pieces in the same oil until almost done. Keep the pan covered so that the chicken does not get browned, but is cooked inside. Drain them and keep aside.
  • 6.Heat 2 tbsp of oil in another pan (You can use the same oil in which we fried the chicken pieces. This will enhance the flavour). Add slit green chillies and curry leaves. Saute for 1 minute.
  • 7.Add the tomato paste to this and saute for 1 minute.
  • 8.Now add the prepared chicken & roast until it is dry.
  • 9.Make sure that all the chicken pieces are well coated with the tomato paste.
  • 10.Sprinkle garam masala & pepper powder and mix well.
  • 11.Add lemon juice and mix well. Check for salt. Add a little if needed.
  • 12.Now add the fried onions and mix well.
  • 13.Tasty Kerala Chicken roast is ready.

  • Prepare the powder:
  • 1.Dry roast black peppercorns, fennel and cinnamon. Grind it in a mortar and pestle.
  • Prepare the spice paste:
  • 1.Mix all the ingredients together.

  • 1.In a pan add 2 tsp oil and 2 Tbsp spice paste. Saute. Turn off the heat.

  • 1.In a pan add oil and sear the chicken from both sides.

How to Make Chicken Chettinad

How to Make Chana Aur Khatte Pyaaz Ka Murgh

  • 1.Marinate the chicken pieces with ginger-garlic paste as required, salt, lemon juice and dry spices.
  • 2.Boil the chickpeas with bay leaf and turmeric powder. Once the chickpeas is boiled, cool it in a bowl.
  • 3.Take a pan and add ghee, marinated chicken and cook it for some time till it is golden brown.
  • 4.Take oil in a separate pan and heat the oil. Now add cumin seeds, onions and whole garam masala.
  • 5.Once the onions are gold brown add the remaining ginger garlic paste.
  • 6.Add the tomatoes and cook for a while. Now add the chana and cook for 10 minutes.
  • 7.Once it is done, grind the onions-tomato masala with ginger, green chillies into a paste and pass through a sieve.
  • 8.Add some yoghurt, mint and cook again for a while. Finish with adding
  • 9.the chicken and the cream.
  • 10.Garnish with coriander and sliced pickle onions.
  • For ajwaini parantha:
  • 1.Make dough with the maida, carom seeds, salt, oil and little water as required.
  • 2.Make dumpling, roll as a flat bread and cook it on a tawa.
  • 3.Garnish with the fresh herbs.

How to Make Masaledar Chicken Lollipop

  • Prepare masala:
  • 1.Dry roast all the ingredients together in a pan for a minute.
  • 2.In a mortar and pestle pound together all the ingredients.
  • 3.Transfer this in the blender and make a fine paste.
  • Prepare chicken:
  • 1.Marinate the chicken lollipops with turmeric, salt, red chilli powder and 2 tsp oil.
  • 2.In a saucepan add a little oil and sear the lollipops from all sides till they are half cooked.
  • 3.Add sugar and cook some more.

  • 1.Add refined oil in the pan followed with mustard seeds, few curry leaves and onion. Bhuno them well together.
  • 2.Add the masala and chicken lollipop into the base and saute them well together.

  • 4.Add little lemon. Toss well and cook till chicken is well done.
  • 5.Garnish with coriander leaves.

Ingredients Of Butter Chicken

  • 400 gms raw chicken
  • For the Marinade:
  • 2 tsp red chilli powder
  • 2 tsp ginger and garlic paste
  • 2 tsp salt
  • 2 tsp lemon juice
  • curd
  • 1/2 tsp garam masala
  • 1 tsp kasuri methi
  • 2 tsp mustard oil , pureed
  • For gravy:
  • 2 tsp oil
  • 2 to taste butter cubes
  • 3 gram Cloves
  • 1 Cinnamon sticks, sliced
  • 1 tsp Mace
  • 7 Cardamom
  • 4 Tomatoes, chopped
  • 1 tsp garlic
  • 1 tsp ginger
  • 2 butter cubes
  • 1 tsp ginger garlic paste
  • 1 1/2 tsp red chilli powder
  • 1 tsp kasuri methi
  • 2 tsp honey
  • 1 green chilli
  • 2 tsp cardamom powder
  • 1 tbsp cream

How to Make Butter Chicken

  • For marination:
  • 1.In a mixing bowl, put raw chicken pieces and add salt, red chilli powder, ginger garlic paste and lemon juice. Mix well.
  • 2.Refrigerate for about 15-20 minutes.
  • 3.Now add curd to the refrigerated mix. Followed by salt, ginger garlic paste, red chilli powder, garam masala, kasuri methi and mustard oil. Mix well and refrigerate again for an hour.
  • 4.Roast the marinated chicken in an oven for about 30 minutes until it is three-fourth done.
  • Prepare the chicken gravy:
  • 1.Heat 2 tsp of oil in a pan with butter.
  • 2.Add cloves, cinnamon stick, mace and cardamom. Saute and then add chopped tomatoes, garlic and ginger. Mix well and then grind well.
  • 3.In another pan, heat another two cubes of butter, along with ginger garlic paste.
  • 4.Add the tomato puree made from the mixture. Now add red chilli powder, kasuri methi, honey and finally the roasted chicken pieces. Let it simmer.
  • 5.Add green chilli, cardamom powder and cream. Mix well.
  • 6.Serve with a teaspoon of cream over.

How to Make Chicken Shami Kebab

  • 1.Soak 1 cup of chana dal for at least 30 minutes.
  • 2.In a pressure cooker heat oil and add cumin seeds, cloves, black peppercorns, cinnamon, coriander seeds, ajwain, red chilli and chilli flakes. Saute for 1-2 minutes.
  • 3.Now add the soaked chana dal and mix thoroughly.
  • 4.Add the boneless chicken and salt. Bring to simmer, adding required quantity of water.
  • 5.Cook until all the water has evaporated and chicken is tendered.
  • 6.Let it cool for some time and then grind all the ingredients to a thick paste.
  • 7.In the paste add ginger, green chilli, garlic, coriander leaves and mint leaves. Mix all the ingredients to combine well.
  • 8.Now add the raw eggs liquid and mix thoroughly.
  • 9.Using your palm make the kebabs of any desired shape and size, generally flat round shape.

How to Make Chicken Dum Biryani

  • 1.First mix the saffron in half a cup of milk and keep aside.
  • 2.Now in a bowl, add all the marination ingredients and coat the chicken pieces well with it. Let it marinate for about 4 hours.
  • 3.Now to prepare the rice, put all the ingredients given except saffron and milk, in warm water along with washed rice.
  • 4.Cook for 10-15 minutes.
  • 5.Heat some ghee in a pan and add all the marinated chicken followed by cooked rice in it. Top with saffron milk, coriander leaves, fried onion and chopped almonds. Mix well.
  • 6.Let it cook on a low heat (on dum, in it’s own heat) covered with foil for about 20-30 minutes (till the water evaporates and chicken and rice are fully cooked).

How to Make Roasted Chicken Masala

  • Preparing Tandoori Masala:
  • 1.In a pan dry roast coriander seeds, green cardamom, cinnamon, bay leaf, black cardamom, cloves, cumin seeds and turmeric powder together.
  • 2.Put all these ingredients in a grinder and grind them to make masala.
  • For Marinating Chicken:
  • 1.Place chicken in a bowl.
  • 2.Add salt, red chilli paste and ginger- garlic paste to it.
  • 3.Now add mustard oil, curd, peppercorn, chaat masala along with tandoori masala and lemon juice.
  • 4.Mix it well using your hands so that the chicken gets properly coated with the masala.

  • 3.Mix thoroughly so all the ingredients are deeply binded with the chicken. Refrigerate the mixture for 15-20 minutes.
  • Prepare the batter:
  • 1.Add one egg, flour and corn flour.
  • 2.Mix it well to make a paste and then add soda. Whisk well and keep it in the refrigerator for 15-20 minutes.
  • 3.After the refrigeration of the marinated chicken and the batter, take them out and pour the batter on the chicken strips one by one.
  • 4.Deep fry the strips.
  • Tempering:
  • 1.Add some oil in a pan. Put mustard seeds, pepper corns, curry leaves and red chilli into it.

  • 5.You can add chopped coriander too if you like. Add the oil as well and mix.
  • 6.Add the shaan seekh masala and mix well with hands.

  • 8.Later, wet your hands and form a ball with the mince. Use wooden skewer and press out a kebab.

  • 1.Marinate the chicken in curd.

  • 3.Add some chopped dhaniya, salt as per taste and garam masala.
  • 4.Also add black salt, chat masala, cream and cheese.
  • 5.Keep the marination aside for half an hour. Leave it overnight, if possible, for better absorption of flavours.
  • 6.Apply butter and then grill, preferable in a charcoal tandoor for 10 – 15 minutes.
